The kids love to make the tostadas themselves. Just line up all the ingredients of the tostadas on a counter and let each child assemble it themselves. Encourage them to try and experiment with different combinations. This recipe is great with shredded chicken or lean ground beef also. If you are vegetarian or kosher, this recipe also works great with veggie crumbes. Enjoy!&lt;br /&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;br /&gt;1 lb ground turkey &lt;br /&gt;1 14-ounce can petite diced tomatoes , with or without with jalapeños &lt;br /&gt;1 medium onion , thinly sliced &lt;br /&gt;8 corn tortillas &lt;br /&gt;Canola or olive oil cooking spray &lt;br /&gt;1 avocado , pitted &lt;br /&gt;1/4 cup prepared salsa &lt;br /&gt;2 tablespoons reduced-fat sour cream &lt;br /&gt;2 tablespoons chopped fresh cilantro &lt;br /&gt;1 cup shredded romaine lettuce &lt;br /&gt;1/2 cup shredded Monterey Jack cheese &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Recipe Directions&lt;/strong&gt;&lt;br /&gt;1. Preheat to 375°F.&lt;br /&gt;&lt;br /&gt;2. Bring can of tomatoes to a boil in a medium saucepan over medium heat. &lt;br /&gt;3. Add onion and cook, stirring occasionally, until the onion is soft and most of the liquid has evaporated, 15 to 20 minutes. &lt;br /&gt;4. Add turkey and cook until browned throughout.&lt;br /&gt;5. Coat tortillas on both sides with cooking spray. &lt;br /&gt;6. Divide the tortillas between 2 large baking sheets. &lt;br /&gt;7. Bake, turning once, until crisped and lightly brown, about 10 minutes.&lt;br /&gt;8. Mash avocado in a bowl. Stir in salsa, sour cream and cilantro until combined.&lt;br /&gt;9. To assemble tostadas, spread each crisped tortilla with some of the avocado mixture. In fact, studies show the majority of New Year's resolutions have to do with dieting, healthier eating and/or losing weight, and getting more exercise. How about this year, instead of making a New Year's resolution for yourself, why not challenge your family to make one together-something you would like to improve upon as a family. Need some ideas??? Try one of these ideas below or, like I said, come up with one together. &lt;br /&gt;1. Have dinner together at least twice a week.&lt;br /&gt;2. Share "Highs and Lows" together at the table.&lt;br /&gt;3. Plan one family activity during the weekend that everyone can participate &lt;br /&gt;4. Each member of the family pick and make a dinner (or help with depending on age) each night.&lt;br /&gt;5. Have a family breakfast once a week, during the week, not on a weekend!&lt;br /&gt;6. Fit in fitness for everyone. Make a plan for the whole family to increase fitness.&lt;br /&gt;7. Make volunteering as a family a regular habit.&lt;br /&gt;8. Eat more veggies. &lt;br /&gt;9. Everyone vows to treat their body as the gift it is!&lt;br /&gt;&lt;br /&gt;These are just suggestions. Really the process of thinking of and picking out the resolution should be fun, relevant, and make a difference in everyone's lives. If every family member participates in the planning, they are more likely to buy in to the plan. Figure out a way to keep track and reward the family for keeping the resolution periodically. Goodbye to 2009! This year has been a tremendous one of growth for Girls in Motion. &lt;br /&gt;*We started the year with our new Friends of Girls in Motion speaker series. We were all privileged to hear from 4 great speakers about relationships, internet usage, kids and sports, and communication. All were such relevant topics and hopefully we are all putting to use many of the tips we received.&lt;br /&gt;*We expanded our summer camp programming. We went from facilitating 6 weeks of camp in 2008 to facilitating 16 weeks of camp in 2009! Ten of those weeks were completely underwritten for underserved areas of Dallas. We served close to 300 girls. Whew! It was a crazy, yet extremely rewarding summer! &lt;br /&gt;*This fall we hosted our third annual kids trick or treat triathlon. We had over 185 kids participate, and close to 100 volunteers help us! What a fun event it was for everyone involved. &lt;br /&gt;Thanks to everyone who helped make Girls in Motion what it was this past year! I am now officially Dr. Golman. I have to say that it feels great to have those little letters before my name (or after..Ph.D.). So much to share! My dissertation topic was evaluating the Girls in Motion program and its impact on body satisfaction in the preadolescent participants. I also compared the participants by ethnicity. I am happy to report that I had statistically significant findings in the study. Participation in the Girls in Motion program had a significant effect on the body satisfaction of the participants. Body dissatisfaction and drive for thinness was significantly reduced in the participants. In addition, I also found that out of all of our participants, the African American girls had the highest body dissatisfaction before the program, and the lowest after the program. The fact that the African American girls had the highest body dissatisfaction compared to Caucasians and Hispanics is interesting. Typically, but not always (as we see here), African American girls report higher body satisfaction then other ethnicities. It is a reminder to everyone that body dissatisfaction is not limited to just certain groups but all ethnicities are at risk. A proposed law would strip PE requirements for all high school students. Now is not the time to reduce physical education in schools and lawmakers need to know this is unacceptable.  Please take action today and tell your elected officials to preserve PE in schools. &lt;br /&gt;&lt;br /&gt;Obesity is a leading cause of heart disease and stroke and a risk factor for diabetes, cancer, and many other chronic health problems.  Now is not the time to take PE out of school, if anything we should be increasing it.  &lt;br /&gt;&lt;br /&gt;We are asking lawmakers to change the portion of SB/HB 3 that removes PE requirements. After trying several and testing them on my kids (and their friends), I think this is the best one to offer. You can add other ingredients such as fruit also. While not quite as healthy, sometimes I will add a few chocolate chips to each pancake. Just a few, not a thousand like some well known breakfast restaurants. We are offering many new locations this summer so everyone that wants to participate can participate closer to home. In addition, partial and full scholarships are available, to please don't let the economy be the reason not to let your girls join the fun and learn some important tools while they're at it. The girls that participate in our camps learn to make healthy snacks and get a recipe book to take home, engage in fun fitness games everyday, and learn important information about taking care of their ever changing bodies. 95% of campers and their parents love our camp and would recommend it to others-so check it out!&lt;br /&gt;&lt;br /&gt;In light of the economy, it does appear that many people that usually send their kids to day camps during the summer are opting out. I hear the stress in mothers' voices as they think about how they are going to occupy their kids this summer and keep them from sitting around and watching tv all day. We are expecting a week of 80 degree days-perfect for after school, late afternoon playing outside, bike rides, trips to the park, etc. Take advantage of these days to get some family exercise outdoors. What you say?? You can't do that because you need to be indoors making dinner? With some planning, staying indoors instead of playing outside does not need to be the case. Today's recipe is Taco Salad. This easy to make dinner is perfect for hot afternoons, is something the kids can help with, is good for you and quick!&lt;br /&gt;&lt;br /&gt;Taco Salad&lt;br /&gt;&lt;br /&gt;1 can kidney beans&lt;br /&gt;1 lb. either 95% lean ground beef or &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;Morningstar&lt;/span&gt; veggie crumble&lt;br /&gt;1 package taco seasoning mix&lt;br /&gt;shredded lettuce&lt;br /&gt;Baked tortilla chips&lt;br /&gt;tomatoes&lt;br /&gt;2% shredded cheddar&lt;br /&gt;1-2 &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;avocados&lt;/span&gt;&lt;br /&gt;salsa or dressing of choice&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;You can make the beef or veggie crumble ahead of time-just mix in the taco seasoning package and follow directions. Using veggie crumble is a great way to reduce calories and fat for everyone. Mixed in with tacos most kids really can't tell too much of a difference.&lt;br /&gt;Kids can wash and shred lettuce (no knife needed) or chop tomatoes or you can buy prepackaged lettuce already chopped and use grape tomatoes for even less prep time. Line up all parts of the salad on the counter and let your family assemble the salad as they like it. Don't be afraid to engage your kids in the preparation process. It is important for them to feel like they are contributing to the family, and studies show they are more likely to eat what they help prepare.&lt;br /&gt;This salad is the perfect light meal for a Spring evening. A majority of families do not. Don't we all wish we had the kind of time to make our children a hot homemade, healthy breakfast each morning? While research confirms many children and adults do not eat breakfast, research also confirms that those children that do eat breakfast tend to have better grades and attention spans in school. Who can focus when your stomach is growling? I know I can't. Studies also show that breakfast truly is the most important meal of the day.It jump starts your body. Think of it as putting gas into your tank to get you moving. So then you say to yourself: "Well the only things we have time for do not possess the most nutritional value." That does not need to be the case. Here is a list of healthy breakfast options that are quick and easy and will hold your child to snack time or lunch.&lt;br /&gt;&lt;br /&gt;7 Healthy Breakfast Options for the Busy Family:&lt;br /&gt;&lt;br /&gt;1. Instant plain oatmeal with adding your own brown sugar, nuts, fruit and raisins, etc (Starbucks didn't create this!)&lt;br /&gt;2. A tortilla heated up with cheese-you can even add a microwaved egg (45 sec) and you have a great breakfast taco.&lt;br /&gt;3. A bagel or toast with peanut butter-travels well in the car&lt;br /&gt;4. A cheese melt on bagel or toast-whole wheat is better&lt;br /&gt;5. A yogurt parfait-take a travel yogurt and throw some granola or other cereal and fruit into it&lt;br /&gt;6. Microwave some veggie sausage (Morningstar farms is really good)&lt;br /&gt;7. Eating disorders continue to increase and are potentially life threatening. In the United States, as many as 10 million females and 1 million males are fighting a life and death battle with an eating disorder such as anorexia or bulimia. Millions more are struggling with binge eating disorder. Instead of self deprecation, do something nice for your body this week. Tell somebody else how fabulous they are both inside and out! Be a critical viewer of the media. Don't allow the media to guide how you feel about yourself. Encourage the same for your friends and family members. Resolve not to diet, but to nuture and nourish your body. Our first speaker, is Dr. &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;Cathey&lt;/span&gt; &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;Soutter&lt;/span&gt; on March 25&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;th&lt;/span&gt; at noon. She will discuss helping our preteens navigate relationships. While there has been much published about bullying, there doesn't seem to be many resources for parents in helping our children form and maintain healthy relationships, both friendships and romantic relationships. Not one day goes by that I do not hear from a parent about the difficulty their son or daughter is having with a friendship.This preteen time can be challenging to friendships as kids this age change at such different rates.  Parents of both boys and girls will benefit from Dr. &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;Soutter's&lt;/span&gt; insight. I have heard her talk to many groups about relationships. In summary, students with higher fitness levels scored higher on standardized tests. While many theories are tossed around, according to Dr. Karen Weiller at the University of North Texas Department of Kinesiology Health Promotion and Recreation, "it could just be that the students are better able to focus after energy release." Even with this release of data in the last few years, schools still appear to be reluctant to make physical activity a priority over academic subjects. Hopefully as more and more data mounts, educators will take note. All I know, is that if your children are having a hard time focusing on homework right after school, take them on a bike ride or walk around the block with the dog and see if that helps. Also, happy to say that I am currently finishing my dissertation, which I have come across so much incredible information to pass along to the Girls in motion community. So sorry for my absence! I would like to start publishing recipes on Mondays again, so please check for a great family friendly recipe. Also, I would love feedback about some of the issues that you are dealing with with your preteens, whether it be about food, exercise, sports, friendships, bullying, relationships, etc. &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;Occasionally&lt;/span&gt; we will have guest &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;bloggers&lt;/span&gt; that will discuss some of these important issues that all of our children are facing.&lt;br /&gt;&lt;br /&gt;Here is my recipe for this week: Fish Tacos. The recipe uses cod, but you can use almost any fish, or also tuna steaks are great. You might have to use a low-fat cheddar cheese on it for some kids, but try it without first.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Fish Tacos&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Fish&lt;br /&gt;&lt;br /&gt;2 pounds cod fillets&lt;br /&gt;3 tablespoons lime juice (about 2 limes)&lt;br /&gt;1 tomato, chopped&lt;br /&gt;1/2 onion, chopped&lt;br /&gt;3 tablespoons cilantro, chopped&lt;br /&gt;1 teaspoon olive oil&lt;br /&gt;1/4 teaspoon cayenne pepper (optional)&lt;br /&gt;1/4 teaspoon black pepper&lt;br /&gt;1/4 teaspoon salt&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Slaw&lt;br /&gt;2 cups red cabbage, shredded&lt;br /&gt;1/2 cup green onions, chopped&lt;br /&gt;3/4 cup nonfat sour cream&lt;br /&gt;3/4 cup salsa&lt;br /&gt;8 6-inch corn tortillas&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;1. Preheat oven to 350 degrees.&lt;br /&gt;2. Rinse fish and place on rack in baking dish, to drain fat off fish.&lt;br /&gt;3. Mix lime juice, tomato, onion, cilantro, olive oil, peppers, and salt and&lt;br /&gt;spoon on top of fillets.&lt;br /&gt;4. Cover loosely with aluminum foil to keep fish moist.&lt;br /&gt;5. Bake 15-20 minutes or until fish flakes.&lt;br /&gt;6. Mix cabbage and onion; mix sour cream and salsa and add to cabbage&lt;br /&gt;mixture.&lt;br /&gt;7. Divide fish among tortillas. Add 1/4 cup of slaw to each. Fold over and&lt;br /&gt;enjoy!&lt;br /&gt;&lt;br /&gt;Let me know how you like it. This week we are conducting a camp at SMU with  some girls from North Dallas and a group of girls from a South Dallas program called "Rae's Hope." &lt;strong&gt;The camp for Rae's Hope was underwritten by Ebby Halliday, realtors. Thank you! Thank you! Ebby!!&lt;/strong&gt; This has been such a special week. I just have to talk about what I have witnessed. I have watched all of the girls(north and south) get to know each other playing fun, fitness games. I have watched the girls bond with their college age mentors, hugging them everyday as they leave the camp. I have watched them come bounding in the next morning excited about the day's activities.  I see them energized by their walks and jogs-thrilled with the new distances they covered.  I see them engaged in discussions about body image and hear them talk about the importance of taking care of their bodies, giving wonderful examples. Everyday they walk around the SMU campus-it's good to familiarize them with a college campus-so they can imagine themselves there one day. Tomorrow is the last day of camp for these girls. I feel heavy hearted to say good-bye to them. Luckily, Rae's hope and I have discussed other ways we can partner during the year so we can build upon what we have started this week. Challenge your kids to find a recipe online that they would like to make-they'll probably be happy it won't count toward their computer time- and then go to the grocery store together to get the ingredients. Give them some guidelines, such as:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;nutritional information has to be provided&lt;/li&gt;&lt;li&gt;30% or less of calories from fat&lt;/li&gt;&lt;li&gt;you can specify a certain number of ingredients or types of ingredients&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;While at the grocery store, you can also spend some time examining labels, differences in portion sizes listed on the labels, and also pricing of food. For example, have them compare two different sizes of pasta bags and the costs and see which is a better bargain. It's a good lesson in economics and math, and science.&lt;/p&gt;&lt;p&gt;Let me know if your family finds a great family friendly recipe. I'd love to see it or hear about it. I've included a recipe today for a snack we make at our camp that is everyone's favorite called Apple Ladybugs. It's fun to make and looks cute! Enjoy!&lt;/p&gt;&lt;p&gt;&lt;strong&gt;Apple Ladybugs&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;Ingredients&lt;/p&gt;&lt;p&gt;2 red apples&lt;br /&gt;1/4 cup M&amp;amp;Ms&lt;br /&gt;1 tablespoon peanut butter&lt;br /&gt;8 thin pretzel sticks&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Directions&lt;br /&gt;1. Slice apples in half from top to bottom&lt;br /&gt;2. Scoop out the cores using a knife or melon baller. If you have an apple corer, core them first, then slice.&lt;br /&gt;3. Place each apple half flat side down on a small plate.&lt;br /&gt;4. Dab peanut butter on to the back of the 'lady bug', then stick M&amp;amp;Ms onto the dabs for spots. Use this method to make eyes too.&lt;br /&gt;5. I have not had a computer to write on.  I'm including my usual Recipe Monday recipe-even though its Tuesday!  This recipe is for a really great hummus that kids and grown ups like. Serve it with sliced vegetables and carrots for a good afternoon snack for your kids, which are now home, pretty much looking for something to eat all day long. In fact, get them to make it for you-it is that easy. You can also experiment putting other ingredients in it, such as peanut butter, apples, etc. Enjoy!&lt;br /&gt;&lt;br /&gt;Weight watchers Healthy Hummus Recipe&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;3 garlic cloves, minced (more if you like)&lt;br /&gt;1/4 cup plain low-fat yogurt&lt;br /&gt;1 Tbsp fresh lemon juice&lt;br /&gt;1 tsp olive oil&lt;br /&gt;1/4 tsp salt&lt;br /&gt;1/4 tsp paprika&lt;br /&gt;1/8 tsp pepper&lt;br /&gt;1 19oz can chickpeas, drained&lt;br /&gt;&lt;br /&gt;Combine all the ingredients in a food processor and process until smooth.Chill. Studies show that just moderate walking 3 times a week is enough to gain this important benefit. If we didn't have enough motivation before to get our daughters exercising, this is certainly an imperative reason! It is from the website &lt;a href="http://www.hungry-girl.com/"&gt;www.hungry-girl.com&lt;/a&gt;.  Great recipes on there. I made this one for my own kids and they loved it and I thought it was delicious also.&lt;br /&gt;Hope you like it!&lt;br /&gt;&lt;br /&gt;Hungry Girl Hot Tamale Pie&lt;br /&gt;PER SERVING (1/6th of pie): 220 calories, 2.75g fat, 630mg sodium, 37g carbs, 3.5g fiber, 8g sugars, 16g protein -- &lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;For Topping 1 pouch &lt;a href="https://webmail.smu.edu/exchweb/bin/redir.asp?URL=http://www.bettycrocker.com/products/cornbread-and-muffin-mix/Cornbread-Product-Landing-Page.htm" target="_blank"&gt;Betty Crocker Authentic Cornbread &amp;amp; Muffin Mix&lt;/a&gt; 1/4 cup fat-free liquid egg substitute (like Egg Beaters) 3 tbsp. no-sugar-added applesauce&lt;br /&gt;For Pie One 12-oz. package frozen ground-beef-style soy crumbles (like Morningstar Farms Meal Starters Grillers Recipe Crumbles or Boca Meatless Ground Burger) 1/2 cup canned sweet corn kernels, drained 1/2 cup canned black beans 1/3 cup chopped onion 2 tbsp. taco sauce 1 tbsp. taco seasoning 1/2 tsp. ground cumin Directions: Preheat oven to 350 degrees. Mix together cornbread mix, egg substitute and applesauce. Set aside. In a large pan sprayed lightly with nonstick spray, begin to cook onions and soy crumbles over medium heat. Once crumbles have thawed, add in taco seasoning, cumin, and 1/4 cup of water. Stirring occasionally, continue to cook until the water has absorbed. Then add the taco sauce, corn, and black beans, and mix well. Pour mixture into a large round casserole dish sprayed lightly with nonstick spray, and then evenly cover with the cornbread topping mixture. Bake in the oven for 20 minutes, or until top is golden brown and firm. It also addresses media and body image issues. While it is a tough play, it is also very funny. I would recommend it for all parents and teens 13 and up. You can go to &lt;a href="http://www.dct.org/"&gt;http://www.dct.org/&lt;/a&gt; for tickets. Show times this weekend are: Friday at 7:30, Saturday at 1:30 and Sunday at 1:30 and 4:30. This summer, let's try and reverse that trend. How to keep kids from playing playstation and watching tv all day? Try coming up with a new sport as a hobby that the family can do together, or the child can practice alone in the yard.&lt;br /&gt;&lt;br /&gt;For example, buy some inexpensive lacrosse sticks ($10.00 for two) and practice throwing, catching, running together. Make a makeshift goal between two trees.
