Healthy Pancakes

After my breakfast blog a few weeks ago, I had a request for a healthy pancake recipe. After trying several and testing them on my kids (and their friends), I think this is the best one to offer. You can add other ingredients such as fruit also. While not quite as healthy, sometimes I will add a few chocolate chips to each pancake. Just a few, not a thousand like some well known breakfast restaurants. Even better would be to top with bananas, blueberries, blackberries, or strawberries, which are so pretty right now.

Healthy Oatmeal Pancakes

1/3 cup dry oats
1 large egg
4 oz egg whites (add a little more for thicker pancakes)
1 tsp vanilla

Mix in blender for 1 minute.
Pour into large bowl, let sit for 2 to 3 minutes.
Cook in a non-stick griddle.

Enjoy!
