After my breakfast blog a few weeks ago, I had a request for a healthy pancake recipe. After trying several and testing them on my kids (and their friends), I think this is the best one to offer. You can add other ingredients such as fruit also. While not quite as healthy, sometimes I will add a few chocolate chips to each pancake. Just a few, not a thousand like some well known breakfast restaurants. Even better would be to top with bananas, blueberries, blackberries, or strawberries, which are so pretty right now.
Healthy Oatmeal Pancakes
1/3 cup dry oats
1 large egg
4 oz egg whites (add a little more for thicker pancakes)
1 tsp vanilla
Mix in blender for 1 minute.
Pour into large bowl, let sit for 2 to 3 minutes.
Cook in a non-stick griddle.
Enjoy!

Dr. Drew Alexander to speak at next Friends of Girls in Motion lunch
Dr. Drew Alexander, a Dallas pediatrician and adolescent specialist will be out next guest speaker at our Friends of Girls in Motion meeting on Thursday, May 14th at 12:00pm. Please check out the website for more specific details. Dr. Alexander has 30+ years in private practice specializing in adolescent males. He will be addressing the effects of IMing and texting on adolescent development. What parent of preteens or teens doesn't worry about this??? He will discuss what he is currently witnessing in his practice. I have had the privilege of hearing him speak several times and know everyone will enjoy what he has to say and learn quite a bit of information in the process. Come with questions!!! Summer Camp Time!
As April is wrapping up, it is time to think about summer camp options for the kids. Please take a look at the Girls in Motion summer camp schedule at http://www.girlsinmotion.org/. We are offering many new locations this summer so everyone that wants to participate can participate closer to home. In addition, partial and full scholarships are available, to please don't let the economy be the reason not to let your girls join the fun and learn some important tools while they're at it. The girls that participate in our camps learn to make healthy snacks and get a recipe book to take home, engage in fun fitness games everyday, and learn important information about taking care of their ever changing bodies. 95% of campers and their parents love our camp and would recommend it to others-so check it out!
In light of the economy, it does appear that many people that usually send their kids to day camps during the summer are opting out. I hear the stress in mothers' voices as they think about how they are going to occupy their kids this summer and keep them from sitting around and watching tv all day. I will address this issue in future blogs, continuing to provide helpful, healthy tips to keep your kids moving this summer.

Monday's recipe- Light Spring/Summer Meals
Finally the Spring weather is here in Dallas! We are expecting a week of 80 degree days-perfect for after school, late afternoon playing outside, bike rides, trips to the park, etc. Take advantage of these days to get some family exercise outdoors. What you say?? You can't do that because you need to be indoors making dinner? With some planning, staying indoors instead of playing outside does not need to be the case. Today's recipe is Taco Salad. This easy to make dinner is perfect for hot afternoons, is something the kids can help with, is good for you and quick!
Taco Salad
1 can kidney beans
1 lb. either 95% lean ground beef or Morningstar veggie crumble
1 package taco seasoning mix
shredded lettuce
Baked tortilla chips
tomatoes
2% shredded cheddar
1-2 avocados
salsa or dressing of choice
You can make the beef or veggie crumble ahead of time-just mix in the taco seasoning package and follow directions. Using veggie crumble is a great way to reduce calories and fat for everyone. Mixed in with tacos most kids really can't tell too much of a difference.
Kids can wash and shred lettuce (no knife needed) or chop tomatoes or you can buy prepackaged lettuce already chopped and use grape tomatoes for even less prep time. Line up all parts of the salad on the counter and let your family assemble the salad as they like it. Don't be afraid to engage your kids in the preparation process. It is important for them to feel like they are contributing to the family, and studies show they are more likely to eat what they help prepare.
This salad is the perfect light meal for a Spring evening. And, you get to play outside and enjoy the fabulous weather on top of it!
